Good Friday Everyone

Today is weigh-in Friday and I am happily down 1.2 pounds today, “Praise the Lord.” I read an article about drying strawberries for a natural snack, so I decided today I decided to make some. Below you will see the three stages of my strawberries. Good to live close to my family’s strawberries field. You can get some of these luscious berries at The Farmer’s Shed, no pick-your-own, just pick up. As these strawberries dry the sugars concentrate so they are so sweet, which means portions have to be controlled.

I have no words of wisdom for you today except have a great weekend.

Dried Strawberries:

Wash

Stem

Slice into ½ inch slices

#1 – Place in dehydrator – mine took about 8 hours

#2 – Place on parchment paper on cookie sheet – put in oven at 200o for 3- 31/2 hours, with oven slightly cracked

191 days and 22.92 lbs. till Disney Food & Wine. (Finally got to change that darn weight number.)

I am your average 50+-year-old who woke up one morning wondering how and where the extra 30 pounds suddenly appeared came from. I became a bit overwhelmed at the responses (I know, this should have been a good thing right?) and stopped it about a year ago. Some of the recipes I post will be from the newsletter. I will not count calories or eat lettuce. Girl gotta eat. I also will not give up good craft beer and wine, I will watch my portion size however. I intend to cook healthy, full of flavor foods, which will allow me to eat more, exercise at least 4 times a week (no gym or gym contracts), reduce and try to eliminate processed foods, and have snacks handy. I am a work in progress and will always be. If I am crazy enough to post my weekly weight, you need to be crazy enough to tag along on this journey.
