More “O” Please

Hope everyone had a wonderful Memorial Day Weekend. I was kind of lazy and thoroughly enjoyed it. I will be on the road every day the rest of this week, so I was saving up. I had a good run with some walking Sunday, and yesterday a good bike ride. I may not be losing weight like I had hoped but I feel great and my endurance is really picking up so there is a win.  When I run or bike the best part is coming home. Regardless which way I go out of my driveway its up-hill, so coming home, its downhill. Yesterday I was carousing around the last curve before my drive-way and thought, “that looked like a phone”. So I turned around and went back up-hill, boo, and found a very nice large iPhone 6 on the ground. After picking it up I immediately begin going over in my mind how I would find out who’s it was. No lock, no problem; so I found the last person they had texted, sent them a text and asked if they could get in touch with the owner to let them know their phone would be in my mailbox. I didn’t get a reply so I just put the phone in the mail box and set outside reading. No I wasn’t waiting to see who would pull up to get it, okay maybe a little. About thirty minutes later this small truck pulled into the driveway and instead of stopping at the mailbox, pulled all the way in. I stood up and he asked if I was the person who found his phone, and I confirmed. He was so thankful and appreciative, it made my day.

I read an article the other week and I cannot for the life of me remember where I saw it, but the jest was that exercise is the ultimate healer, mentally, and physically. When you are exercising you are giving your body what it craves the most – oxygen. Physical exercise gets our blood pumping and oxygen coursing through our veins and that’s why we gain strength, energy, and a sense of well-being after exercising. Getting enough oxygen will give both physical and emotional strength to overcome obstacles such as illness, injury, anxiety, depression, and fatigue. I always feel so good after I exercise, even if I have to push myself to actually get started, but once I do get started, I’m good. Oxygen is the third most abundant element in the universe and makes up nearly 21% of the earth’s atmosphere. In preparation for your appearance on Jeopardy, name the number one and two most abundant elements. (Answer at bottom.) Oxygen accounts two thirds of the mass of the human body so no wonder it is so important we get a new clean dose regularly.

Delicious Refrigerator Stir-Fry Veggies

Roomie went to Atlanta for the long weekend so I was looking for something healthy and quick for dinner; and I found the jackpot. I literally went through my refrigerator and used what I had, so you can do the same thing and it will be totally different but just as good.

I used:

1 ½ cups Cabbage, cut thin

1 ear corn, kernels removed

I had half red and half green bell pepper, slice thinly (No idea why, sometimes I am sure things just appear in my refrigerator)

Shredded carrot

2 small yellow squash, halved and cut ¼”

½ can leftover chickpeas

1 onion, halved and thinly sliced

Heat large non-stick skillet with 2 Tab olive oil on medium-high heat; added all veggies.

  • Stir in 1 ½ tsp dried dill, salt & pepper.
  • Stir occasionally until veggies were tender crisp. It does not take very long, 5-8 minutes.
  • Add 1 Tab Bragg Liquid Amino or 1 Tab soy sauce and serve.

Delicious and nothing wasted.

I will not count calories or eat lettuce. Girl gotta eat. I also will not give up good craft beer and wine, I will watch my portion size however. I intend to cook healthy, full of flavor foods, which will allow me to eat more, exercise at least 4 times a week (no gym or gym contracts), reduce and try to eliminate processed foods, and have snacks handy. I am a work in progress and will always be. If I am crazy enough to post my weekly weight, you need to be crazy enough to tag along on this journey.
