I had no travel today so I decided last night that today would be a spent tying up loose ends so I could strike something off my daily “Work Do List”. I keep a spiral notebook, presently I am using one I purchased at Disney a few years ago that has tiny Vinylmation figures on the front and back cover, which I write down my work objectives for each day. Often many of these carry over from day to day; or should I say week to week or month to month.  For anyone who hasn’t been to Disney since 2008, Vinylmation is a brand of 1.5 inch, 3 inch, and 9 inch vinyl collectibles sold only at Disney. Most of the figures are shaped like Mickey but have different themed markings, colors, and patterns. There are probably hundreds of different designs and they are everywhere in Disney. I just read the Star Wars Editions were just released and there were literally hundreds of comments from collectors who were all a “twitter”. (I don’t collect them, but I get it.)  I do have a drawer full of left-over and unused spiral notebooks from my children’s high school and college years which I use for my grocery list; and have enough for a lifetime of grocery list. Work needs something more special to make me smile when I look at it so I splurge. I also write down daily phone calls so I keep these notebooks for years after they are filled.


I am meeting a friend for a drink after work today, so roomie is going to get dinner started. He is a good cook but tonight it will only require browning ground turkey with taco seasoning.  I did not have time today to look for a recipe to make the Catalina dressing called for in the recipe, so I purchased it and am not pleased with myself.  I bought the Lite version, but it has more sugar than the regular, but a few less grams of fat. The first ingredient in the regular dressing was sugar, whereas in the Lite version, the first ingredient is tomato puree with sugar the third ingredient and corn syrup the fourth. Honestly I will probably throw the rest out after the recipe tonight and I HATE being wasteful, but I feel so much better since I have been eating very little processed foods and added sugar.

Dorito Taco Salad

Full disclosure I found this recipe yesterday and knew it would be on the menu this week. I adapted this recipe from Emily Bites

1 lb 95% lean ground turkey

1 (1.25 oz) packet taco seasoning

2 medium heads Romaine lettuce, shredded

1 medium-large tomato, diced

4 oz 50% less fat or 2% sharp cheddar cheese, shredded

4 oz nacho cheese Doritos, broken up a bit into bite sized pieces

1 cup light Catalina or French dressing (I used Kraft Lite Catalina)

  • Brown meat in a skillet over medium heat, breaking it up into pieces with a wooden spoon. Add the packet of taco seasoning and stir until well coated. Set aside.
  • In a large serving bowl, combine the lettuce, tomatoes, cheese and ground beef. When ready to serve, add the Doritos and dressing and toss to coat.

I will not count calories or eat lettuce. Girl gotta eat. I also will not give up good craft beer and wine, I will watch my portion size however. I intend to cook healthy, full of flavor foods, which will allow me to eat more, exercise at least 4 times a week (no gym or gym contracts), reduce and try to eliminate processed foods, and have snacks handy. I am a work in progress and will always be. If I am crazy enough to post my weekly weight, you need to be crazy enough to tag along on this journey.
