Many Questions, Few Answers

I tried to come up with something witty and catchy today, but due to the circumstances the only two things that keeps crossing my mind is, “They were in Church at Bible Study where everyone should be safe” and “Would it had made a difference if one of the victims had a gun with them?” I don’t know the answer to the last question, but it keeps running through my mind. Last year when I was on Church Council we discussed if we needed to draft policy requesting members who have a permit to carry concealed weapons not bring them in church. FYI we do not have a “No Concealed Weapons Allowed” sign on our doors.  For the record, I have no issues with members who have been trained and have permits to carry a concealed weapon bringing them into church, and I must say even less issues with it today.  Another thought that has crept in my mind a few times today is I hope the accused learned something good during the hour he spent with those fine folks who I believe welcomed him with open arms to their Bible Study. The only two things I do know for certain: there is a God and all our questions will have answers one day and evil still lives among us.

Sliced Tomatoes with Corn & Feta

 3 c. fresh corn kernels

2 c. baby arugula

4 oz. feta crumbled

2 tbsp. Chopped fresh oregano

1/3 c. olive oil

3 tbsp. red wine vinegar

Kosher salt

Freshly ground black pepper

2 lb. tomatoes, sliced

Combine corn, arugula, feta, oregano, oil, and vinegar in a bowl. Season with salt and pepper.

  • Serve corn mixture on top of sliced tomatoes

I am your average 50+-year-old who woke up one morning wondering how and where the extra 30 pounds suddenly appeared came from. I am a Mom to two grown children, an Environmental Engineer (go Clemson Tigers), and a farm girl. I was raised on a green onion and collard farm in what was then rural Lexington County, SC. I became a bit overwhelmed at the responses (I know, this should have been a good thing right?) and stopped it about a year ago. Some of the recipes I post will be from the newsletter. I will not count calories or eat lettuce. Girl gotta eat. I also will not give up good craft beer and wine, I will watch my portion size however. I intend to cook healthy, full of flavor foods, which will allow me to eat more, exercise at least 4 times a week (no gym or gym contracts), reduce and try to eliminate processed foods, and have snacks handy. I am a work in progress and will always be. If I am crazy enough to post my weekly weight, you need to be crazy enough to tag along on this journey.
