Another ridiculous hot and humid day in SC; anyone surprised? I would think it has to break at some point before Christmas. The one good thing is my grass isn’t growing and I am thrilled with that. It may be brown, but even the weeds have given up a little. The state of SC’s current record for heat was set in June of 1954 when it was 111 degrees. I hope Mother Nature isn’t trying to emulate Brittany Spears with “Baby One More Time.”
When my children were young, I made almost everything they wore except for play clothes. When I was pregnant with my second child I really wanted a girl, because I knew the day would come when smocking clothes for my son was going to end, with a girl I knew had a lot longer. Then it happened one day when my son’s Dad suggested that I might need to quite “smocking” for him; he was merely two. A light gray john-john with red fire trucks was the last thing I ever smocked for him. However I knew I had many more years left with my daughter and I took full advantage of it. Then my heart broke into pieces when she was in five year old kindergarten and I was informed she would no longer wear “smocking.” My heart broke. She did however wear plenty of clothes I made her, just not with smocking. Then many years later when my oldest niece was expecting her first child, my children informed me that they would prefer I not smock for any of their cousins children, that I should save that for their future children. Let me point out that both of them were still in high school at that time. Now I have been informed that I need to practice up on my smocking so when I do have grandchildren, I will be back to perfection. One of my daughter’s close friends has recently had a precious baby girl and she has informed me she would be willing to take any “practice” items. Who would have ever known that simply making my children’s clothing would have become so political and had so many darn rules?
Okra Rice
May sound unusual but taste excellent. My sister’s restaurant made this dish for the SC Palmetto Pallet several years ago and it was very well received; once people got past the name of the dish, never understood that, they loved it.
4 cups cooked brown rice
Quart okra ends removed and sliced about less than ½” more than ¼”
1 cup finely chopped onion
4 slices bacon, cooked crisp in microwave
Olive oil
Salt/pepper
Add olive oil to large frying pan over medium-high heat and add onions, okra, salt, and pepper. When the okra is soft and the onion browned add the cooked rice. Stir until rice is slightly fried, stirring constantly.
- Crumble bacon on top and serve immediately.
